Breakfast for Dinner Quiche | Lean & Green

I have started a new diet because I keep saying “I just had a baby” but really, I had him almost a year ago. So, as the year of Kaden’s birth is getting closer, I have decided it is time to make a change. If I’m honest, I have always struggled with my weight. I’ve never been the girl who can eat pizza and not gain weight. I’m the girl that looks at pizza and gains 5 pounds. Ok, I’m exaggerating, but it has never come easy for me. At my healthiest weight, I was eating 6 small meals a day that were basically lean and green and protein driven while exercising at least an hour, usually more a day.

So when I was confronted with the question of how to get rid of the extra pounds that I gained eating ice cream while Kaden was happily growing inside me, I realized that was just not going to be easy for me to do at this point in my life. Chasing a pre-toddler boy around all day is just full time work. I LOVE It! But, I’m lucky if I have time to grab something. And, when I was grabbing something to eat, It wasn’t healthy because I needed It to be fast. Chips and salsa or a quick cheese crisp were my guilty pleasures.

My friend told me about Optavia. She lost 17 pounds in 2 months so I thought I could try it out. And, this is where I feel funny talking about what I’ve been doing, but I am because so many people have been asking me. Basically, I needed something easy, manageable, and healthy.

When I signed up for a month, I was sent all of the fuelings (5 of them a day). These are everything from protein shakes, brownies, cookies, mashed potatoes, biscuits, pasta. The fun part is that you get to make and eat one lean and green meal a day at any time of the day! So, Aaron and I have been experimenting with different lean and green meals… mostly Aaron is experimenting, while I’m eating (God bless him!).

But, I am happy to say that it’s day 6 (when I wrote this It was) , I’m still alive, the food is mostly good, and I’m down 10 pounds. Which is just reassurance that I should keep going!

I recently posted asking what you wanted to see more of, and a lot of you said food. So, I figured I would share our lean and green meals for you! These follow the Optavia rules and if you use Optavia you will see that I’ve noted the condiments, protein, veggies and healthy fats for you in case you want to try them! Just a disclaimer, we are not chefs and I especially love easy to make meals. So, please don’t think these are going to be anything absolutely out of this world… they are simply realistic and tasty!
