4 Festive 4th of July Recipes
I LOVE the 4th of July. Aaron proposed to me on the fourth and I love dressing up in red, white, and blue while watching the fireworks! Typically we throw a party, but this year with everything going on we opted for a poolside day as a fam! I love to be able to have some festive food and drinks, so of course I started dreaming up some fun ways to celebrate and still stay somewhat healthy!
Infused All-American Water| It is so hot in Texas right now, so I thought a little infused water would be fun!
Fill a pitcher with ice water, add 1-3 drops lemon oil, 1/4 cup blueberries, 1/4 cup raspberries, and a few sprigs of mint. Can sub 1 drop spearmint oil. Mix It up and serve.
Red & White Stripes| Tomatoes count as a veggie for my diet and I’m allowed to have some cheese as well. So, I decided to make these little skewers that are Optavia friendly. They are just half of my lean and green meal for the day.
For two servings, put 1/4 cup tiny mozzerella balls in a bowl and coat with 1/2 teaspoon oil, a pinch of salt and pepper, 1/4 teaspoon vinegar, and 1/4 teaspoon chopped basil. With two cups cherry tomatoes, alternate tomatoes and cheese on skewers.
Blueberry Mule| You know I love a good, festive cocktail. Aaron and I have a lot of Western Son blueberry vodka, so I decided to turn that into a fun American mule. This is so simple, you will love It!
Optional: sugar the rim of your glass. Fill with ice. Pour in one part blueberry vodka, 2 parts ginger beer, add 1 drop or 1/2 lime juiced. Stir and enjoy. Optional: garnish with blueberries and a lime wedge.
Red, White & Blue Fro-Yo| I found this fun recipe on Hungry Girl and It looked so tasty I just had to try It!
Choose a pan that will fit in your freezer (baking sheet or 8″ x 8″ pan) and line It with parchment paper. In a bowl, combine 1/12 cups plain greek yogurt, 1 cup natural light whipped topping, 1 1/2 Tablespoons lemon juice, 4 packets of Truvia, 1 teaspoon lemon zest, 1 teaspoon vanilla extract. Spread the mixture out on the baking sheet or pan. Top with 1/2 cup blueberries and 1/2 cup strawberries (sliced). Lightly cover with foil and freeze until firm (at least 2 hours).
